Aubergine Parmigiana
Sorry not to have been round much - I've had an eventful year..the most being the passing of my younger brother at Christmas.
Anyway,looking forward now to making some more delectable vegan recipes and uploading on my blog. I have come across some wonderful recipes which I adapted to my own taste - here is one, Aubergine Parmigiana that I made last night. My family devoured it! I found a vegan version of Parmesan cheese, as the original is NOT vegetarian! A good tip is to make enough of the tomato sauce - use fresh tomatoes and blanch them in boiling water, then the skin will peel easily!

Vegetarian Christmas Meal App
Hi Everyone.
Just to let you know I've created another iPhone App that helps you create the perfect vegetarian Christmas meal.
Ideal if you've got Vegetarians over for dinner during the festive period. Although it has a Christmas theme, it can of course be used throughout the year for a meal to remember.The application is completely self contained and requires no internet connection once downloaded. No waiting for ages to stream the video. The link is below.

Grilled Vegetable and Goat's cheese Wraps

Preheat your grill to 200 degrees before starting
Serves 4
INGREDIENTS
6 Spring Onions
1 Red or Green Peeper
1 Aubergine
290g of Button Mushrooms
Half of 1 Fresh Lemon Juice
Half a bowl of Green Olives
2 large cubes of Goat's Cheese
4 Tortilla Wraps
10ml of Olive Oil
Plenty of Coarse Black Pepper
Pinch of Salt
To line the Tortilla wrap with either:
*Spinach Leaves
Rocket
Lettuce Leaves
*high content of iron
Optional ingredients:
Red or Green Chilli or....Scotch Bonnet!!!
Can be served with barbecued potato wedges or with the Wild Rice Salad (my first recipe on this blog!)

Vegetarian Mousakka

PRE-HEAT your oven to 200 degrees before you prepare your Mousakka
INGREDIENTS
500g potatoes, chopped in large slices and par-boil for five minutes
2 red peppers, sliced
1 aubergine, chopped in large, chunky slices
Olive oil
3 cloves of garlic
1 onion, chopped
400g of Passata (Creamed tomatoes)
125g of Cherry Tomatoes
FOR THE SAUCE
300ml of Dairy Free Yoghurt
2 Eggs
Good portion of Dairy Free Parmesan Cheese (from the Free-from range in most supermarkets)
Debbie's Tip: Eating beetroot is good for cleansing the blood. It is rich in vitamin C, fibre, potassium, magnesium, manganese, and folic acid. The leafy tops are an excellent source of beta-carotene, iron and calcium (0:
