Vegetarian Christmas Meal App
Hi Everyone.
Just to let you know I've created another iPhone App that helps you create the perfect vegetarian Christmas meal.
Ideal if you've got Vegetarians over for dinner during the festive period. Although it has a Christmas theme, it can of course be used throughout the year for a meal to remember.The application is completely self contained and requires no internet connection once downloaded. No waiting for ages to stream the video. The link is below.

Grilled Vegetable and Goat's cheese Wraps

Preheat your grill to 200 degrees before starting
Serves 4
INGREDIENTS
6 Spring Onions
1 Red or Green Peeper
1 Aubergine
290g of Button Mushrooms
Half of 1 Fresh Lemon Juice
Half a bowl of Green Olives
2 large cubes of Goat's Cheese
4 Tortilla Wraps
10ml of Olive Oil
Plenty of Coarse Black Pepper
Pinch of Salt
To line the Tortilla wrap with either:
*Spinach Leaves
Rocket
Lettuce Leaves
*high content of iron
Optional ingredients:
Red or Green Chilli or....Scotch Bonnet!!!
Can be served with barbecued potato wedges or with the Wild Rice Salad (my first recipe on this blog!)

Vegetarian Mousakka

PRE-HEAT your oven to 200 degrees before you prepare your Mousakka
INGREDIENTS
500g potatoes, chopped in large slices and par-boil for five minutes
2 red peppers, sliced
1 aubergine, chopped in large, chunky slices
Olive oil
3 cloves of garlic
1 onion, chopped
400g of Passata (Creamed tomatoes)
125g of Cherry Tomatoes
FOR THE SAUCE
300ml of Dairy Free Yoghurt
2 Eggs
Good portion of Dairy Free Parmesan Cheese (from the Free-from range in most supermarkets)
Debbie's Tip: Eating beetroot is good for cleansing the blood. It is rich in vitamin C, fibre, potassium, magnesium, manganese, and folic acid. The leafy tops are an excellent source of beta-carotene, iron and calcium (0:

Green Curry Vegetable Fried Rice: quick and easy vegetarian food

1 cup of Long Grain White Rice, soaked in cold water, then boil until al dente (to the tooth)
1 cup of sweetcorn

Thai Green Noodle Soup: quick and easy vegetarian meal

1 can of Coconut Milk
1 tbsp of Jalapeno (Spicy peppers)
Pinch of salt
2 tbsp of Green Curry Paste
1 organic vegetable stock
1 bowl of fresh rice noodles, stir fry in two tbsp of sesame seed oil for 2 minutes
1 packet of dried Shittake Mushrooms, soaked in cold water for 30 minutes
1 tsp of Brown Sugar
7 or 8 Closed Cup mushrooms, sliced
4 Spring Onions, cut length ways
4cm Lemongrass
5 Kaffir lime leaves
1 bunch of Fresh Coriander, cut length ways
3 tsp of Tamarind Paste
1/2 Litre of Water

2tbsp Whole Tahini (Creamed Sesame paste) - purchase from Holland and Barrett stores
1 pinch of Ground Cumin
1 clove of Garlic
Fresh Lemon Juice (half of one Lemon)
4tbsp Omega Oil Blend (purchase from most supermarkets)
1 can of Chickpeas (drained and rinse under cold water)
1tbsp of Jalepenos
Cold water (to combine the ingredients)
Debbie's Tip of the Day: The best juices for blood purification are lemon juice, beet juice, carrot juice, and the juices of all leafy greens. Leafy green juices are particularly important because they supply chlorophyll, an essential part of any blood purification therapy. Chlorophyll not only cleanses the blood of impurities, but also builds up the blood with important nutrients, promotes regularity, and inhibits cellular damage from radiation. 150g Soft Cheese

1 Onion or Shallot
2 cloves of Garlic
1 Green Pepper
50g of Creamed Coconut, finely grated
2 cups of Long Grain Rice
1 teaspoon of Dried Thyme (can use fresh Thyme)
1 can (400g) of Black Eye Beans (can buy from most supermarkets...in the "Ethnic" section(!)
Coarse Black Pepper
900ml of Vegetable Stock (only use enough to cover the rice, but reserve the rest in case your rice dries out)
Tip of the Day: Never, EVER skip breakfast. It is the most important meal of the day. Why? Skipping breakfast can lead to tiredness, lack of concentration and poor performance at work or school. It also means that you are more likely to snack on unhealthy foods such as chocolate or crisps before lunch.

Recipe for Vegetarian Chow Mein
INGREDIENTS
2 Tbsp Sesame Seed Oil or Stir Fry Oil
Half a jar of Black Bean Sauce (make sure it is vegetarian as some brands have shrimp paste)
1 packet of firm Tofu (like Cauldron brand)
1 cm of fresh ginger - cut into small pieces
3 garlic cloves
1 celery stick
1 red chilli (if you want extra spice)
For the spices:
Dark Soya Sauce
Coarse black pepper
Chinese Five-Spice (can buy from the Pound shop ....good enough for me!)
For the vegetables:
Spinach
Bamboo shoots
Baby sweetcorn
Horse radish
Chilli - red or green
Cucumber (cut in small slices)
Fresh noodles

Recipe for Wild Rice Salad

1 cup wild rice
1 clove of garlic
4 cups vegetable stock
4 stalks celery, sliced
8 green onions, sliced
Salt and pepper
1/4 cup olive oil
3 tbsp Hemp Seed Oil*
2 Tbsp red wine vinegar
1 teaspoon sugar (preferably brown)

Method
1 Pre soak the rice in cold water for a minimum of 2 hours
2 Put the vegetable stock in a medium sized saucepan. Add the rice and
wild rice, bring to a boil, reduce heat to low, cover. Let cook for 40
minutes. Remove from heat. Cool completely.
3 Whisk together the olive oil, dark soy sauce, red wine vinegar, sugar, and *Hemp Seed
oil.
4 In a large bowl gently mix together the cooled cooked rice, chopped
celery, green onions and dressing. Add salt and pepper to taste,
if needed.
Chill completely before serving. Serves 8-10.
*Daily Tip: 3 Teaspoons of Hemp Oil a day...to keep the skin smooth!

8 green onions, sliced
